Pazo
Pazo, on the waterfront in downtown Baltimore, Maryland is one of those places that no matter what incredible things you hear about it, you are totally unprepared for the experience of simply walking through the front door. Pazo resides in what was once an old canon making warehouse that was large enough for steam engines to pull into. Now it is a stunning restaurant that specializes in Mediterranean food with a focus on small plates or tapas.
But what is really cool is their commitment to incorporating their own bread into the menu. Dale Duggins leads a small team of bakers who make all the bread for Pazo as well as their other restaurants in the area. You won't find a lot of whole grains in the loaves as the chef/owner doesn't think their flavors match up well with her food. But through a combination of starters, careful production and their bake in a woodfired oven the breads are perfect compliment to the food.
